Barefoot Bloggers - Coconut Cupcakes


Why, Ina? Why? I really didn't want to fall in love with another one of your recipes that involves unwrapping multiple sticks of butter, blocks of cream cheese or measures sugar by the pound. But like my first flirtation with dark chocolate, there is no going back now that I've tried your luscious coconut cupcakes.

This one will be short as it's late and I'm trying to get this one posted on time. These were easy to put together (other than the pain of unwrapping six sticks of butter), and as I mentioned, they were deee-licious. Ina says this recipe makes 18-20 cupcakes. I don't know what kind of muffin tins she's using but I got 24 regular cupcakes and 24 minis. And I had a lot of leftover frosting.

I try not to do the math to see how much butter I am eating in each cupcake (I only got 20 cupcakes). I got a lot of extra frosting too - I stuck it in the freezer but I have no idea what I am going to do with it.

Ina's recipes always make enough for the neighborhood - and the next neighborhood, too!

I haven't tried these yet, because I know I will love them!

I totally agree with you about the butter & sugar, I always reduce the sugar in the baking & reduce the butter & sugar in the frostings. I too was wondering what size pans she uses because I got 24 cupcakes & 6 muffins from this recipe.

I think I may have made a coconut cake recipe from Ina a few years ago and it was amazing!! I'll have to check if it's the same as the cupcakes. If not, I'll definitely try these. I love coconut cake!

That cupcake looks cute! I bet it would be great with toasted coconut as well. But then again, I'm allergic to coconut, so I can't say for sure that toasted coconut would taste that good.
Wow, 6 sticks of butter! I'm assuming that's for the batter AND frosting.
