This week's
Craving Ellie in My Belly recipe was meant to be for breakfast, but don't you love having breakfast for dinner? We sure do. So I made this one with asparagus instead of broccoli, didn't bother with the overnight soaking of the bread and it was still delicious. You can find the recipe in Ellie Krieger's new book,
So Easy. Many thanks to Heide of
Chez Zero for hosting this week and picking an easy, versatile and yummy dinner. Even if it was supposed to be breakfast.

This look so good. Can't wait for asparagus season.
I wish my husband would eat breakfast for dinner. This might be a recipe I could pass off for dinner.
Yum I love asparagus. I'm going to make this but it might be this weekend before I get to it! Yours looks really delicious.
Looks great! I'm not an asparagus fan, but I do love how versatile this recipe is. Great idea with the individual servings like that, too. When you say you didn't soak it overnight, did you let it soak at all? I thought about trying to skip that step to save myself assembling it all in the morning, but I wasn't sure if that would work or not.
That looks tasty. I think I'd prefer broccoli. There's something about broccoli and cheese that makes me go YUM!
this looks delicious!! I am kicking myself for not making it! I must make it ASAP!
Too bad you won't join HCB, although I fully understand. Would you be interested in a small-ish baking group I'm setting up? We only bake once a month. Check it out. It's called: ABC of the Month
We ate this for dinner as well and it was a great dinner. I like the idea of putting it in the little ramekins like that and the asparagus sounds wonderful. Nice to know that you don't HAVE to soak it overnight. Yours looks really wonderful.
Looks delicious Leslie! I love having breakfast for dinner.
Asparagus! Another delicious sub for the recipe, even though I haven't tried it yet. I will, though! Your version looks nice and cheesy!
So cute that you baked it up in ramekins! Glad you enjoyed the recipe!
what a great idea to add asparagus and serve it in small ramekins!
This looks really, really tasty. I've been so absent from Ellie lately, and I'd hoped to jump back in on this one, but it just didn't work out! I love that you added asparagus -- I bet that was really quite tasty!
