Vanilla Spice Oatmeal


When I looked at this recipe this morning, I found myself thinking, "Hey, wait a minute! This is what I eat for breakfast almost every day, only better."

Ellie Krieger dreamed up a way to make my morning oatmeal even more yummy, with minimally more calories. I make mine a little differently than she does (I make a single serving in the microwave every morning). With the added flavors of vanilla, chopped toasted pecans and brown sugar, this was so fabulous it will be hard for me  to make it any other way from now on.

Leslie what a cute post this was. And I wish I could eat oats, but I cannot. I subbed out risotto so that I could cook along, but it just wasn't the same as good ole fashioned oatmeal. Glad you enjoyed this and it looks delicious.

I am e-blushing :). I am glad you liked the oatmeal. I think it is nice that the CEIMB recipes offset the TWD and FFWD richness! Thanks for cooking along with me this week. Countdown to Paris has begun...I am goingt to buy a lock to leave on the bridge!

Not every morning, but quite often for me in the winter. The only thing different for me was the vanilla and nuts. Definitely the way to do oatmeal from now on.

We really liked this as well...I thought it packed a lot of flavor, just like you said, for a few amount of add-ins that were chosen. Will make again for sure. Yours looks great!

This combination of flavors sounds terrific, I'll have to give it a try! It's supposed to be below 0 here tonight, so a warm bowl of oatmeal would be a perfect breakfast.
