TWD - Sweet Potato Biscuits (sort of)



Reading. I need to learn how to do it. Or maybe it's just reading comprehension I need to practice.

It would have made these biscuits much different.

For starters, I found canned, mashed sweet potatoes at Trader Joe's, and smugly substituted them for the ones the recipe called for.

I substituted two cans of mashed sweet potatoes for two cans of sweet potatoes.

And I did this even though I read Dorie's intro to the recipe, where she tells us that if you have left over mashed sweet potatoes, measure out 3/4 of a cup or so and go with those.

Two cans of mashed sweet potatoes is about 4 cups.

It took me a while to realize I had made a batter not a biscuit dough. So I added lots more flour.

Lots.

And lots.

And then more.

I tossed in some maple syrup.

And then more flour.

Then I realized the rest of the ingredients were off, too. There wouldn't be enough butter.

I threw up my hands, and decided to make drop biscuits.


They were decent. Not decent enough to share, but enough for me to eat one. I told no one I messed this up. So please keep this to yourself.

Oh no ! I'd never find the canned one so I had it well in mind I needed a cup but I couldn't figure out why two 15 once is like a cup unless they mesure the syrup too !! I'm waiting for you !! When ??

Well I used a cup of fresh mash and they were dry as sawdust. Yours sound good!

Oh boy. How many did that make? Still, they look fluffy and tasty. Not bad to have at hand.

Oh! Boy! I envy all that baking you've been making... those look absolutely delicious (especially in that plate that I still love so much! Hey! Maybe when you're done wit the set... I can buy it from ya? LOL LOL LOL)

LOL on all those sweet potatoes in your recipe. I bet they tasted fantastic, however, as we love sweet potatoes around here! I am going to keep trying with a sweet potato biscuit recipe, as I really want these to work out. They are such a great color and on the plate they look beautiful!

Hey they look great! We learn so much from baking..trial and error! I liked this recipe but Im not in love with it!

BTW - I misread directions all the time. It's a miracle I haven't burned the house down by now.

I sort of had the same problem when I made pumpkin bread. I totally forget I halved the recipe. > 1 hr, the bread was still wet. I ended up throwing away my brick of pumpkin puree (not pumpkin bread) in the trash. At least you tried fixing it!!

I must be in the same boat. Now where did it say to use 3/4 c of SP mashed? I just used potatoes from a 29oz can. maybe I used toooooo much too. he he

Oops, they still look nice! I won't tell anyone. I misread this recipe too and cut mine too thin.

Way to make it work anyway.
What about biscuit cake, has that been done. Just spread the batter in a pan. Hmm? ;)

Haha this is totally something I would do. I never read recipes as carefully as I should and far too often find myself surprised by something I should have seen. Kudos to you for finding a way to make them work despite the issues :) I won't tell a soul!

As my daughter-in-law often says, mistakes just make them look homemade--and that's not such a bad thing when it comes to food if it still tastes good. My lips are sealed.

what a cute post! I only used half the potatoes it called for and mine turned out pretty good, but not really flavorful. I wish I had used more spices! Sorry you didn't like these. There's always next week! Have a great week.

Yeah, I did the same thing and used 2 cups of mashed potatoes AND 1 cup of pumpkin. FAIL! Mine are currently nourishing the compost heap. ;)

YEP!!! Surprising how important reading the recipe is. Have had trouble with that myself. Ah, Well!!
