CEiMB - Tuscan Vegetable Soup


This week was perfect for soup. We got a huge rain storm in the Bay area earlier this week, which is when I made this soup. I needed to bring a pot of soup to my P.E.O. meeting, and I was thrilled to see Lobster and Fishsticks chose this recipe for this week's Craving Ellie in My Belly.

I already had everything I needed to make this and came home a little early to make it before the meeting. I kept looking at the recipe, thinking "is this it?" It was so easy! I used fresh sage and rosemary from my garden, and doubled the recipe. After our meeting, this is all that was left (which was fortunate, since I'm a closet blogger and hadn't taken a photo!)


I went easy on the herbs and salt as I was afraid of overdoing it, and that was a big mistake. You may also consider grating some lemon rind into the soup, or finishing it with my favorite secret weapon, a tablespoon of balsamic vinegar. It was even better the next day.

I couldn't believe how quick and easy it was to make either! Of course, that would have meant nothing if it didn't have the great flavor it did have. I'm sure the ladies in your group were quite happy to have this!

YUM. It sounds delicious. The balsamic suggestion is great. I like using it in caramelizing onions.

Neat ideas about the lemon and the vinegar! I'll have to try one of them next time around. This soups a keeper! Looks great and it was very nice of you to share, too.

I made this soup yesterday after seeing so many great reviews of it's delicious. Definitely a good go-to for winter lunches.

Everybody was making this soup and it sounded so good that I decided on the spur of the moment to whip some up, too. From decision to dinner time: less than an hour. And so good! Glad it was a hit at your meeting.

Oh, yours looks so good. I am making it again this week as we loved just having it ready to go and warming up a bowl now and again. I love how yours looks in the bowl, so healthy and colorful! Fun cooking with you in this group.
