CEiMB Late Edition - Cobb Salad


Work has been insane these last two weeks. Thursday night I got home around 11, Friday night 9, and last night 8:30. Today I was able to work from home. That gave me the opportunity to enjoy this week's Ellie pick for dinner.

I planned to grill the chicken before watching the finale of Next Food Network Star (what did you think, did you want Melissa or Jeffrey to win?). Surprisingly, the grill was out of gas but I was too lazy to swap out the spare tank. So I whipped out my grill pan and made the chicken on the stove. Then it was a snap to put together the delicious dressing, chop the avocado and crumble the blue cheese. I skipped the ham (don't eat it) and the hard boiled eggs (not a fan).

This was a quick and easy salad, perfect for a weeknight dinner or impressive as a weekend picnic at the beach or park. For me, the dressing was the best part.

You know, I really liked Melissa until they showed the pilots tonight. Don't get me wrong, I still like her, but Jeffrey's pilot was a lot more interesting to me and something I would definitely watch. I think Melissa has some great tips, but I'm not sure she brings a really fresh perspective to food like Jeffrey does. I felt like he could really teach me about new ingredients and dishes. Maybe he will still show up like Adam Gertler did :)

I'm sorry you're having to work so much - that sounds stressful! Hope you catch a break soon, but at least this was a quick and easy dinner for those late nights.

It is so interesting how different all of our photos are. It is nice to see each person using her own originality to make the dish, the one she needs for her home.

I really hope work slows down for you soon. I am all too familiar with weekends like that. The salad looks great!

I missed the finale last night! Hopefully they'll rerun it at some point.

Loved this one! I think it was just such a delicious salad and I loved the dressing. Your yellow tomatoes look so pretty, too. Hope everything calms down for you SOON!

Oh Sister! I so can relate to the work thing. One year for one of our busy times I "won" the "worked the most hours" for the hourly employees. It didn't feel like "winning" at the time! I hope all will resume to normal soon.

In the meantime your salad looks very yummy. Glad you liked it!
