CEiMB - Fried Rice with Scallions, Edamame, and Tofu


This week's Craving Ellie in My Belly pick was chosen by Jennifer at Running with Food. I am not a huge fried rice fan, but I was eager to try Ellie's version since it seemed to have a good balance of veggies and rice.

I made two substitutions: I used shrimp instead of tofu (I had some I needed to use up) and mini sweet peppers instead of the red bell pepper (Safeway was out of bell peppers?!?) I actually made the recipe a few minutes ago so I could take it to work for my lunch.

The verdict? Delicious! I liked the look of the dish before I added the soy sauce, but flavor was terrific. This is a lunch I'm going to look forward to eating, and when you're trying to lose weight, liking your food is key to staying on your plan. Many thanks to Jennifer for picking a real winner!

Shrimp is a great idea! I agree about this dish, it's very good and satisfying. Key components in the weight loss game, which I am playing with you. :o)

Looks wonderful! Great idea on the shrimp too. I'm planning to sit next week out too, but looking forward to chicken caccatore!

I'm allergic to shellfish unfortunately so no shrimp for me. I used to love it! Oh well, life goes on right? I think your photos look great and your rice tasty!! I wish I had some for lunch today but mine is all gone already!!!

Oh, shrimp sounds great. Thanks for the tips about rice. I just really never cook it!

No Trader Joes anywhere close to me. I love that store though!!!

We loved the recipe too. It is important while losing weight to like the food you eat. That is what I have enjoyed about Ellie

Love your photos! So glad that you enjoyed this one as well. I think it's a total keeper - quick, easy, healthy and tasty. I'm trying to shed a few pounds too, and I'm glad that this one fits into the plan!
