CEiMB - Chicken Cacciatore


This week, Craving Ellie in My Belly was making the Chicken Cacciatore from The Foods You Crave by Ellie Krieger. Peggy at Pantry Revisited chose for us this week.

I love chicken cacciatore. I love mushrooms, tomatoes, onions and chicken, and I love them together. I was really looking forward to making this recipe. I did make a few changes. I used boneless skinless chicken breasts, added extra onions and mushrooms, and I used sliced cremini mushrooms. I used chicken broth instead of wine, and added quite a bit of salt and pepper since it seemed to want seasoning.

We had this over brown rice and it was...OK. I wanted it to be more assertively flavored, so I would probably add smoked spanish paprika if I were to make the recipe again. That won't be necessary for a while since it made enough for at least eight servings.

I used two of the most enormous bone-in chicken breasts in the world. It was enough for at least 4 people. I really enjoyed the sauce, though. Looks mighty tasty.

Pamela - I used 5 enormous breasts and actually over crowded the pan. Oh well.
Leslie - I would have preferred to use boneless chicken, but my hubby, the one eating it chose the bone in chicken. Our result was ok. Sauce was very good. Posting tonight.

I wanted to use boneless breasts, but my husband bought these enormous ones for us to use. I'm sorry you weren't thrilled with this, but I really appreciate you trying it and cooking my pick with me this week. Thanks so much! It is a joy to cook along with you each week.

Your chicken cacciatore looks fantastic! I had never had it before so really didn't know what to expect. I thought it was really good with the addition of rotel tomatoes and will definitely be making it again.

I used fire roasted tomatoes and extra pepper seasoning. We liked it! It did make a ton of food though.
