Tender Strawberry (Jam) Shortcakes


What, you've never heard of jam shortcakes? Well, I plead temporary insanity. I made these the day before I left on vacation last week and that was only because I was sick, forgetful and completely out of strawberries. But this Tuesdays with Dorie recipe was selected by Cathy at The Tortefeasor. Who doesn't love Cathy? I love her posts, her successes, near misses and hilarious fails. I love reading about (and her gorgeous photos of) her three adorable children and her husband David. So even though I was not feeling well and WAY behind on packing and other preparations for my trip, I wanted to make this. So I made 1/6th of the recipe (the math and yield were perfect).

Although Dorie's recipe was easy and described the procedure very well, I recommend this post by Jessica's brother for it's classic Southern technique.

The shortcakes were super easy to make. I portioned out two shortcakes and put them in the oven. 13 minutes later, they were done. I let them cool, quickly whisked some whipping cream in a bowl, spooned it over a split shortcake. They were very tender and the top sort of broke into a few pieces, but no worries. The pieces were just as delicious with the cream and homemade strawberry jam. Too delicious really!

Thanks, Cathy, for picking a recipe I could make less than 24 hours before boarding a plane, with no stress or mess.

P.S. In my rush, I had a hard time getting a photo of these that didn't include Pearl. She was very focused on getting some yummy shortcake for herself:

Hey, what a busy baker you are! Love them. I think the jam pairs perfectly. I have a few leftover in the fridge. I may just go spoon some jam on top of one for a treat today. Nicely done!

OMG - the pictures with Pearl are true classics, Leslie! I think I'd want to blow it up huge and hang it over the fireplace. I especially appreciate you baking these when you really didn't have time and weren't even a huge shortcake fan to begin with. These look wonderful! I would bake just before leaving on vacation too, so that made me laugh. Love the cat nose in the pictures--that could be a feature of all your photos--does it appeal to Pearl?! Have a great vacation!

With the jam, they become the breakfast version of shortcake. Pearl's little nose poking in the photos is very funny.

I love that you not only found time to whip up the shortcakes but that you were resourceful enough to use jam when you didn't have berries on hand. The shortcakes were really the star of this one so I'm sure they were wonderful even without any fruit :) Love the photos of Pearl - I've been having the same problem with Shane's parents' cats since I've been here.

Oh now how do your do it? You leave comments while on vaca? he he You're so sweet as is your "Jammie Shortcakes!" What a great idea and so Pearl agrees as well. She is one smart kitty. Perhaps she is an official taster?? me thinks. ;") I believe she is a frequent feature here. Hope you are enjoying your time off. Do you miss your kitchen? Funny how that works.

Your shortcake looks great. I like that you combined it with jam. Did you use the jam recipe from the Sweet Melissa book, or do you have a different recipe?

I'm back from vacation and I had a great time visiting with my mom who also traveled to Morocco and my relatives. I hope you have a great vacation too, iA. You certainly deserve it after putting in those long hours!!

I like the idea of using jam! It would be a great sub if you couldn't find decent fresh berries. I think Pearl agrees!
