Gingered Carrot Cookies


This week's Tuesdays with Dorie pick is gingered carrot cookies, selected by Natalia of Gatti Fili e Farina. Dorie relates that she was trying to capture the flavors of carrot cake in a cookie. The flavor of the carrots wasn't as prominent as she hoped but she liked the taste of the cookie as is.

These cookies have the flavors of ginger and nutmeg with raisins and toasted pecans added in for extra yumminess. I made these while I had a cold, and wasn't as in love with them as my tasters. My tasters were more enthusiastic about these cookies than practically any other chocolate-free cookie I've made. The texture is similar to a scone, flaky and light, yet chewy and chunky. People who don't usually care about cookies stopped me in the hallway to wax poetic about how fabulous these cookies were.

  2. Glad you liked them. I did - with frosting. TOo much ginger. Doesn't mean I won't make them again - with cinnamon.

  3. They look great to me...that plate makes them look like a party all by themselves. It was fun baking these with you, you are such a great sport to keep me on track and ahead. I had to bake them again this morning b/c the boys accidentally erased the photos. They wanted to make more room on the photo card for Matt's birthday photos and I told them they could erase all the food photos except the carrot cookies. They thought I said 'carrots.' Good thing this was one easy recipe and one easy one for them to eat! Yes, let's bake espresso cookies soon...they are leaving for swim meet next week, but I can always freeze them until they return. Or we can wait and maybe you will be less busy. Maybe, doubtful, but maybe. ;-)

  4. That is a great response you got from your tasters! I'm a non-chocolate cookie lover, so I liked these baked, but I liked the dough even better. Hope you're feeling better.

  5. I used the large hole on my grater and this really brought out more of the carrot flavor. Your cookies look lovely.

  9. Wow, if people are stopping to talk about the cookies, you know they're a hit! If you have the time, I definitely recommend making them when you can taste them, I thought they were wonderful.

  14. Hope you're feeling better Leslie! I know how much colds stink, I'm still battling mine after over a week. I really enjoyed these cookies despite the cold so I'm sure they'll be even better when I can really taste them. Glad they were such a hit with the coworkers - it's always nice to hear good things about your baking from others :)

  16. These were surprisingly great. I thought they could use a little cinnamon. And I added tons of cream cheese frosting.
