CEiMB - Emerald Stir Fry with Chicken


Just the other day, I was yearning for a cookbook with easy, healthy, tasty recipes. Something fast I could throw together for dinner and not feel guilty for having a cookie afterward. Then I remembered Ellie Krieger's new cookbook So Easy and this week's Craving Ellie in My Belly pick, Emerald Stir Fry with Beef. Allysa at Allysa's Two Bites chose this one for us, and it was a great pick. I subbed chicken since I'm not a big beef fan, and used sugar snap peas and green beans instead of asparagus even though we love asparagus, but it isn't in season yet. I also subbed orange juice for the wine.

Make sure you transfer any leftovers from the pan immediately so the carry over cooking doesn't over cook your stir fry.

  3. Glad you liked the recipe and thanks for cooking along with me this week. I loved how easy this recipe was and it instantly became a staple dinner in our house. There is also so many opportunities to add different veggies based on the season and what looks good at the market. I substituted shrimp for beef and it tasted great. Have a good week!

  5. I love how versatile this recipe is - it seems like everyone did a slightly different variation on the original recipe. In retrospect, I wish I had used chicken or just omitted meat all together. Good tip about avoiding carry over cooking!

  6. Looks great, and I think I will make this again soon with the chicken, or Alyssa had suggested shrimp as well. Could be a whole new calling for me here...woking!

  7. This sounds like a great stir-fry! I like beef, but already have a couple stir-frys I make with it, so chicken sounds like a good idea.

  10. I think subbing the chicken for beef sounds like a great idea. I know what you mean about the hold over cooking time with this stir fry -- I ended up with some soggy veggies. But, it was still a nice, quick dinner, and I'm glad you liked it. Of course, I forgot to blog this (doh!) so I'll have to do a big catch up next week.
